why does pork fried rice taste better as leftovers?

Default why does pork fried rice taste better as leftovers?

got chinese last night and of course, pork fried rice was included. it didn't taste that great last night, but today for lunch i'm loving it! i notice this with all chinese leftovers....what givvlez?

It's true, unless the dish has ginger in it (then it tastes worse the next day)
