is your phone a 2.4Ghz phone? if so, that's the problem. 802.11b/g is also 2.4Ghz and they can conflict with each other.

Can this happen even when the phone is not in use? I swear, since I plugged in my cordless I have been having issues with my laptop wireless.

Also make sure all your phones have DSL filters on them. DSL comes in on the same copper pair as your phone service, and the filters keep them from interfering with each other.
