First of all, congrats dude. That's a big step in anyone's life.
As for your wedding planning, I totally feel your pain. We had the chinese tea ceremony for my wife's side of the family (including paying off the bridesmaids and their silly little games), a full blown catholic wedding for my filipino side, and a chinese banquet reception. Just remember that at the end of all of it, it is your wedding and ultimately you two are the ones who should be happy with it. I guarantee you will not be able to please everyone, even on just one side.
