The actual term of moonshine comes from when it was made. They would brew through the night when the moon was high because it was harder to see the glow of the coals or the burning of the wood.
Now you may be thinking of White Lightning which is basically where Everclear came from and that is straight grain alcohol which is 160 proof or higher (read 80% by volume). Its name came from the effect it had on people. A person would take a slug of it and the eyes would do that funny flash thing like if they rolled back in your head which was called "white lightning" for the burst effect and the name stuck.
Yeah I know its sad that I know this kind of shit but growing up in and around bars as well as 6 years bar tending gets you a lot of info about this kind of shit.
