Put vaseline or scratch some soap before you work on the car. It'll keep dirt from getting in there.

Latex gloves + mechanix gloves = teh clean
My mom is a nurse and she jacks me latex gloves from her work. I use those along with my mechanix gloves and my hands stay clean. You can even lotion your hands before wearing the gloves to prevent crusty ass hands.
