This book lists different editors:

Developmental editor
Production Editor
Editorial Assistants
Editorial Director
Editor in Chief
Director of Editing

Who do i list for MLA documention for the Editor?

If I had to pick one, I would go with the editorial assistants or interns if they have any. Err...how bout the Editor in Chief.
