They just shipped today, but they're sending me the 16x7.5s instead of the 16x7s....you guys think the rim will stick out too far past the 205/45/16 tires?

yes, but the rim is .5" wider.
also, these are 11.5lbs each, 16x7s are 11lbs. each.

Well, it's good that they didn't send you something that had a smaller offset. +42 or greater would be best, otherwise, it might look funny and the wheels/tires would stick out of the fenders.

Are the 7" wide wheels on back order or something?

Yes, they are on backorder for a couple of weeks. But I told the guy on the phone that I wanted the 16x7s...I guess he either didn't hear me, or he thought I wouldn't notice.
Plus, the 16x7.5s are $10 more each.

If there is something wrong, could you send them back in favor of the 7" wide wheels. Especially since you didn't want the 7.5" wheels (and got charged more for them).
