You can use Nero to extract them and there are a few other programs that will allow you to see them and rip them out.
Another thing you can do is rip the video files then extract the music off the video files through a video editing program.

Ugh, I hate them, they don't play on computers. I use a program called "FreeRip" of www.download.com

on my Apple, an enhanced CD just shows up as 2 CDs on my desktop. 1 disc is all the audio, the other is the bonus stuff.
so when i play out of iTunes, it plays just the audio, and i can rip it to AAC or MP3 no problem.
