Default what does *flooding the O-2 sensor* do?

I'm just curious. During my last autocross day, I spun out on a lap, killed the engine, and for several seconds the engine wouldn't start, the CEL came on, and it made this awful chugging sound as it would turn over...

Anywho, it started after a few seconds, and everything was fine. The other CRX racers said I'd flooded my O-2 sensor. What does that mean? Did I physically flood the engine with gasoline and it all came spitting out the exhaust valves and onto the O-2 sensor? thanks
