Why is a ported and polished head better?

I was wondering what's the difference between a regular head and one that's ported and polished? THanx

Porting means making the air pathways bigger. Polishing afterwards smooths out the roughness of the casting and the porting operation. This allows for better air flow properties.

More air + more gas = more power.

A Port and Polish on a Honda is one of the last things you do after building up the engine because Honda heads already have decent flow and it is really expensive.
