Default Adjustable cam gears.

Guys, can somebody explain me how adjustable cam gears work? I know that they are used for timing but I don't know how you actually adjust them.

The red center section rotates independantly from the outer section. You loosen the set screws and rotate the red section to a setting indicated on the gear.

And the red section is connected to the cam, right? Thus, you adjust timing, right?

Yes, the red section is connected to the cam via the Woodruff key, and the outer section's teeth ride in the grooves of the timing belt. When you move the red section in relation to the outer section, you are adjusting the cam timing.
