Default temp guage rising rapidly

I was doing about 85 with the ac on and the temp guage started moving up real fast I turned off the air and put on the heat and it went down right away. Its has not done it again but I spend most of my time on the highway so I don't want to have any future problems that might be cured right now.

Check your coolant level or look for leaks.

no leaks and coolant level is normal this is only happening during hard acceleration with the ac on other then that its fine. Could my mixture be off. Would too much coolant cause this.

No coolant loss? Whats your coolant mix at? 50/50?

I was going to suggest that maybe your fans arent kicking on, but you said it only happens WOT, so that cant be it.

I did have the same problem happening right after I did my swap, and changing out raidiators fixed the problem. Maybe you should try that if you can reproduce the problem every time.

Speaking of thermostat... next time it does it, pull over and feel the BOTTOM hose. It should not be hot and full of water since the thermostat should be open. If its HOT and feels like its full of water, your thermostat is most likely sticking.
