The "legal and recommended way" would be to take it to an authorized A/C service station and have them relieve the system so you don't pollute the atmosphere.
Other than that, stand clear when loosening the high pressure line, but you didn't hear that from me...

The lines at the A/C compressor are sometimes easier to get to, the high pressure line is the main one you need to worry about, but once the system is vented [and you'll know it if the system was mostly or fully charged to begin with] you'll be fine with all the other lines.
Also, if you are truly eco-concerned, there are mobile refrigerant reclaiming companies that could come to you.
