Default 2000 civic 1.6 motor

I have an overheating problem with my 2000 honda civic. It has been diagnosed as a blown headgasket. The problem is I'm being told that when the head gasket is replaced that many times when it is put back together it starts smoking from burning oil. I'm being told it is probably due to the oil rings being wiped out. This doesn't make sense to me. If the overheating caused by a head gasket has damaged the oil rings why doesn't it smoke before you take it apart. I'm not a mechanic but I'm not brain dead either. It seems to me if a blown headgasket wipes the oil rings on the pistons it would start smoking right away and not wait until you take the head off, have it reconditioned and replace it to show up. It this is the case, I hope there is someone out there that can explain it in a language that I can understand because my mechaninc can't.
