ive read up on this because i wanted white for a while too and what i found was that manufacturers didnt do it because it was a safety hazard. Its kind of like having your dome light on while you drive at night, it decreases the ability of your eyes to see details outside the car. Id be curious to see one of those cars at night though, only test drove the accord during the day.
the accord and tsx gauges are definately white, but i'm not sure if they're electro-luminescence or if they're LEDs... i can't find any official confirmation anywhere. but on mercedes website, if you goto the S class features, under instrumentation, you'll find this:

"Electroluminescent analog speedometer, tachometer and gauges for fuel level and coolant temperature."

and if you ever ride in one at night, you'll notice that the gauges are white.

i'm looking into several possible DIY solutions, including getting my own EL panels made, using EL wires, or just using LEDs. i think EL would provide a more even light dispersion, but probably would be more expensive.
