Well, Koni's been making them this way for a while now, so it must work fine. While it's true that the ring isn't real thick and strong, the lever arm is very short, so it's not under great strain.
Well, the middle perch is supposed to be the same height as the stock perch on the stock shocks. So if you leave them on the middle perch, it'll be dropped only as much as the Eibach springs say they will. If you want to go lower, use the lower perch for slightly more drop.
The upper perches on the rear can be useful if you have a huge audio system in your trunk and you need to even out your drop by raising the rear slightly.
