How much horsepower you're going to make is going to be determined by a slew of other variables. You're going to up your torque figures significantly more than your horsepower at high rpm's... but a definitive number can't pinned down. Also realize that stroking an engine requires a robust air-fuel-spark system upgrade. You might email crower and ask them to send you some sample dyno charts if they've got them.
