Sounds good on a basic level, but the bigger question is: How are you planning to do it? On what kind of budget?
There are two strategies I can think of...
1) Just get rid of sh*t ya don't need.
Stereo, AC, Power Steering, Tar Sheets and under-carpet noise insulation, rear seats, etc all fall under this (power steering might be a bit much if you parallel park a lot).
2) Do step #1 and also fabricate the sh*t you do need out of lighter materials.
Tack on a Carbon Fiber hood (easy), CF doors and trunk/hatch (not easy or cheap, would require custom fab and LOTS of $$$).
You could also replace your front and rear windscreens for the lighter ITR ones...
The underlying premise is rock solid. The cost efficiency and aesthetic issues are up to you.
If it were my call I'd say leave the carpet and rear seat in, but strip the tar insulation, ditch AC and stereo, get a quality CF hood (don't forget hoodpins) and get rockin. That should drop around 200lbs (wild ass guess based on the work I've done to other cars I owned) and not end up looking like a theft recovery.
My 2˘.
