If you shift into too low of a gear while the car is at speed, even turning off the motor will not prevent it from over revving. The wheels spinning through the low gear is what revs the motor. Cutting the fuel or ignition isn't going to stop the wheels from spinning. The only thing you can do to save the motor once you've misshifted is by stepping on the clutch or putting the stick in neutral.
