Don't ask me how or why but we have a proper Vietnamese noodle joint with pho and everything here in Madison. More than one actually. The closest to me (and my favorite) is called Saigon Noodle and I've been digging their chicken noodle soup lately. I got takeout and plopped it all in a big ole mixing bowl, with the bean sprouts, basil, a little sambal oelek, and some lime. Man oh man. Delicious!
