You are only supposed to fill it between MIN and MAX not up to and past MAX. It will overflow when you take your 1st corner especially if you car is warmed up.
What I would do though is drain your coolant, flush the system with water, and replace with fresh coolant (takes about 30 mins). If they coolant starts to change color or overflows again they it's definitely a head gasket or something else.
