Did you have the flywheel resurfaced? If you did, you might want to find out how much was machined, because the more that's taken off the further the clutch moves away from the trans resulting in needing the throw out bearing to move further to fully disingage the clutch. If you got an adjustment on the pedal you can compensate for that. You only want a tiny bit of free play on the pedal. Free play is basically how far the throw out bearing is from the fingers on he pressure plate before it touches them, so if you have a lot that's adding to more pedal travel as well. Tighten it up so you have just like a half inch on the pedal before you feel it touch.
