Don't forget, with DVDFab 5, you can convert your DVD's to .MP4. I have my touch loaded with videos. It's awesome for long commutes and waits.
As far as a screen protector goes ... I kept the stock one on there. I have my touch in a leather case, so the edges of the device are covered. The original plastic film won't peel up because of this.

I'm really on the fence about making one, it'd probably entail creating d2v files for DVD's but should eventually support:
AVI/data input
Multi-cores
Quality Multi-passes (to a selectable Nth number of encodes)
Advanced bitrate selection
and pretty much anything the command line x264 utilizes
I could also make profile batches that will automatically convert to preset default sizes and such
