Around here folks pronounce it "cue-doba" but then again Wisconsin is somewhat far from the center of the Spanish speaking universe.

For those who don't have it in their town, it's basically identical to Chipotle except they have a wider variety of ingredients of somewhat (but not overwhelmingly so) lower quality.
