I made chicken with French Quarter tomato rice, added wild rice and instead of using tomatoes I used mango salsa, also added about a cup of dried mixed mushrooms.
1. Put dried mushrooms in container and cover with hot water set aside to hydrate
2. Add olive oil to hot pan
3. Add spices to olive oil
4. Add chicken, fry on each side for 5 minutes
5. Add 3/4 cup of a white rice (brown rice if you wish) and 1/3 cup wild rice
6. Add 1 1/2 cup chicken stock
7. Drain mushrooms, save the stock put mushrooms in pot
8. Add water to mushroom stock to bring total liquid to 1 cup then add to pot
9. Add 1 to 1 1/2 cups of mango salsa
10. Bring to boil, allow to boil for 5 minutes
11. Cover pot and simmer for approximately 25-30 minutes or until wild rice is done
12. Put on plate
13. Use fork and eat.
