It is, I watched a documentary on aircraft carriers on discovery channel - landing, launching, ect. Pilots have both hands in the air until they are airborn and then they resume control. May only be for certain types of jets however - they did not specify.
Edit: I think it was futureweapons episode 8... which is season 2 I think.
Could be wrong.
