Stock heat range plugs will melt. Spark plugs don't just provide spark...they also remove heat from the combustion chamber through the insulator. The longer the insulator, the colder the heat range of the plug is. In your case, you will have to run more than 2 heat ranges colder to avoid melting/fouling out the plugs.
If you are going to be using Hondata, the S300 is a far superior system than the S100 or S200. For the kind of power you are looking at, find an experienced AEM EMS tuner and use that. The amount of tunability with the EMS far exceeds any other Honda specific engine management available (Neptune is pretty close in capability to the EMS, but finding an authorized Neptune dealer/tuner can be hard if you live in a relatively isolated area).
Like Josh said, a 3 bar MAP is all you will need in terms of sensors. The stock ignition should be able to make that kind of power.
