Haven't had too much experience w/ fries, but the last time I made them, I layed them single file on paper towels and got them pretty dry before I dunked them. Helped with the splatter, and they came out pretty nice. I asked the lady at Jack-n-The-Box down the street if I could have some of the seasoning for their curly fries. h: She obliged
