You can clean out carbon from an engine using water or using a special detergent running through a vaccuum line on the intake manifold. If you're iffy about doing any of this on your own, take it to a shop that will do it for you.

"White" smoke can be oil or coolant, depends on the smell and how heavy it is as to how well you can identify it.
