Re-read my post again up above.
My experience shows that 40mm offset you may or may not rub. The reason being is that not all company have the best QA (quality assurance) and one company may make a 40mm offset at their company 38mm and another might make it 42mm.
And actually the best width to get with a 7" wide rim is a 42-44mm offset.
