I dunno...I was born and raised in MN so I visited that mall often. I think one day would be fine, but may be short if you like to window shop slowly and take your time. This is only because its your first time there. There is a lot to see and Camp Snoopy is always fun. I figure one day to walk around would be just stopping by a few stores(there are a lot of them).

If your a big kid like me, there are 4 rides in Camp Snoopy I always ride. The Yellow Screaming Eagle, Paul Bunyan Log Shoot(the best one there IMHO), the rollercoaster, and The Mighty Axe.

Rainforest Cafe is a fun place to eat too.
