I lub teh skin on potatoes.....I usually cut it down the middle...then mash is all around inside the skin with my fork...add butter/SC/chives/cheese.....eat all the insides..then add a lil salt to the skin and eat that.
i do the same..minus eating the skin
if i do eat the skin, i just cut the potatoes into pieces and put butter on them.
