Default Any Amateur Arborists?

Have a few fruit trees that will need trimming over the winter. A cherry, nectarine and peach. They are in the process of dropping their leaves now. I will spray them with the copper based anti-fungus spray soon, but I am wondering. Is it better to prune them early in the winter, late or perhaps it does not matter. I have done some reading, but no useful info. Any of you guys know about pruning fruit trees?
