Could be the head gasket, are you getting any smoke? I just had that problem and the way you decribe it is exactly how mine was acting up with a bit of smoke, not a lot, but definitly noticable. If you disconnected any sensors double check those too, my MAP and TPS sensor look identical and the first time we started mine up after the rebuild it idled pretty bad since those two were mixed up.
