The antifreeze could be leaking out only under pressure. Once the car is at operating temp the pressure pushes the coolant out and the heat from the engine or whatever could be burning it off. You can have the coolant system checked with dye and UV light at most shops, the test will tell you exactly where the leaks are if they are not in the engine itself.
