My question is in what kind of situation does driver need to step on the brake and the accelerator at the same time ? ? i think it should have a name for this action like the "Granny shifting" etc. but i don't know what its called sOrRy

I came across some racing clips where it shows those racer actually step on the brake, crutch in and then heel on the accelerator for a few times . . . I don't quite understand what issit for

Can someone please tell me what issit all actually about ? ? ? Why they gotto do that ? ? and how and under wad circumstances they do that ? ? ?
