You're right in that a powdercoated finish will be more durable.
But because of the high heat required to cure the powdercoating material, you have to completely dissassemble the caliper. The rubber piston seals would melt during the curing process if they were left in.

Again, I say skip it altogether. Too much time involved for too little a gain.
