Well the small things like fluid flush, distro / cap...those I plan do all myself. The bigger things like valve adjustment, belts, water pump...I would NOT trust myself to doing.

Should I go and replace the fuel filter?
I would definitely let the pros do the timing belt and water pump but a valve adjustment is easy to do yourself. I am sure there is a write up on a DIY for that one floating around here somewhere. Here you go:
