The car isn't a POS, it simply has a few issues.
You want to talk about POS cars, start looking at Kias.

1) The temperature fluctuations are likely due to trapped air in the block's coolant passages or lines.

2)That dripping coolant is coming from the right place to be leaking directly from the water pump inlet. That's where I'd start searching for leakage.
