Default Replaced thermostat, whole new set of problems....

Well, ever since I got my 92 teg (2 months ago) the temp. gague never got up to where normal operating temp is, then at highway speeds, it would drop completely below the C. So tonight, I replaced the thermostat. I took it for a cruise down the highway, and it stayed right below mid-reading of the needle, but didn't drop at all. I thought to myself YES, I finally got that taken care of! then when I get home, I let the car idle in the driveway for like 30 seconds, and the temp gague climbs to damn near completely on the H. I look under the hood, and no fans are on at all. I let it cool down, and went for another cruise. nd it was consistent when I would be @ a decent speed, it would be right in the middle, but when I stop, it runs right up to the H. when I re-filled w/ coolant, I bled the system, so i'm pretty damn sure there's no air pockets...I didn't watch the fans for a long period of time, but shouldn't they be blaring if the motor's overheated that much? Why would the car start doing this after replacing the thermostat?? I checked all the thermo sensor plugs & they're all fine, tommorow i'm gonna go through & make sure the fan motors/relays are good, but it doesn't make sense that the fans wouldn't work after I replaced the thermostat. And if there IS in fact air in the system somewhere, why would the speed diffrence thing affect it??? Please help!!!
