I'm pretty sure the main cars were all modded, mostly exterior stuff, and they had lots of extra cars that just had bumpers and wheels on them. Paul Walker actually drove the cars for all of his shots, went through lots of training to pull it off.

They used the real civic engine sound about as much as George Lucas used the real Millenium Falcon sound.
