I guess I would agree with the 1-hour time-frame, if:
- exhaust is cool
- you have all tools/components handy
- you've done it before (which you say you have, on a GTi)

Me, I like to take it at a much more leisurely pace, with lots of cool, refreshing breaks.

Since you would have the header off, this is also a good opportunity to replace the oil pan gasket, if need be. I had no leaks, but I was surprised to find two oil pan bolts missing.
