There are too many variables.. You are being overly cautious IMO..

The ground may not be level.. the Spring may not be completed settled.. Your car is not perfectly symmetric. etc.

I would use a measuring tape, instead of the finger method.

After adjusting did you pull the ebrake? Also, did you just install the coilovers?
