Default Dohc versus sohc engines

Just something i was thinking about, which sets us appart from all the domestics out there. Been doing some reading on the subject, basically dohc does make a difference, because your engines breathing can be improved or adjusted for our needs... a question arises for me, our 7th gen accords have variable valve timing, this could change our torque and hp curves, how is this done? how do i mess with the valve timing to change my engines performance.... , if anyone has any idea or thoughts on the issue please fill us in... as this is a very interesting subject for everyone. Below is a website to better explain what is a dohc and a sohc, seems to me the only difference in the end is the double over head cam, or a single over head cam, since a sohc can just as easilly have a 4v/cyl as dohc's always have... so in the end a dohc is more efficient, how can we use this efficiency to modify the engine to make it more powerful?
