The 360 Challenge is a race prepped 360 Modena sold to individuals or teams for competing in the Ferrari Challenge race series. Main differences with the production car are safety systems and a lot of weight reduction. It is not street legal. It has not been posted in this thread yet. I will see if I can find a picture.
The 360 Challenge Stradale is a special version of the 360 Modena that has certain features from the Enzo such as ceramic brakes and a full CF interior. It is a bit lighter than the 360 Modena, comes only with the F1 gearbox, has a little more power and the suspension is recalibrated. Among other things. It is street legal. The red car posted here above the Enzo is a Challenge Stradale.
The 360 GT is a factory built Le Mans/ALMS/Grand Am/ACO race car that is sold to privateer race teams. It is most definitely not street legal and is extensively worked over even in comparison to the 360 Challenge or Challenge Stradale. The assorted race cars posted in this thread are 360 GTs.
