To lower Ferrari's ego. That was the entire purpose of the GT40, to win Le Mans and take the Title away from Ferrari, and it did.. 4 years in a row.
Also, many great sports car were and are being built that will only be in either single, double or triple digits. Take the Facel Vega Facel II, one car I feel is a very pretty classic Luxury Sports Car ever, only 184 were produced.
