One of the main things that bothers me about PS2 games is that they all seem unfinished. GTA: Vice City for example...choppy animation, bad graphics, crappy controls...it's like a half-assed game. Personally, the novelty of the GTA series wore off for me after about 2 days. While GC games all have beautiful graphics (some say cartoony or childish, but I think they look great)...they all have excellent controls and great animation. They're more playable...and easier to learn how to play also.
I think everybody's just put off by the "childish" image that the graphics give off... I guess they'd rather more "grown-up" games where you beat people with bats and steal their car...when in fact, the "childish" games are way more fun.
GC has:
Super Mario Sunshine
Pikmin
Luigi's Mansion
Zelda
Metroid Prime
Eternal Dark (now there's an adult one for you, and it's an excellent game)
Super Smash Bros. Melee
F-Zero coming soon (I'd rather play that than more realistic driving sims like Gran Turismo)

PS2 has:
Tekken Tag Tournament
NBA Street
SSX
wait...there's probably another one....
