Could be a number of things... You may not have a good seal in the headlamp housing. You could have a crack in it which is allowing moisture to get in and fog it up, etc. At some point, water my begin to condensate as well. I don't know what your set up is but make sure you have a good seal and no cracks. If you have a crack you may just have to live with it or replace it. Good luck.

wait... so u want me to take my whole front bumber off/take my headlights back out... take something like silicon and put it all over and replace it again?

when I first put on my one piece projectors, I had fogging for the first couple of days. Luckily hasn't happened again. I just hope it's not that we have had good "anti headlight fogging" weather. I don't want to have to take them off to seal them.

put your car with the headlights facing the sun so that the moist can evaporate. If it happens again then you should take it off again and check for any un-tightened srews, etc etc..

did you change the entire headlight housing? or did you change just the bulbs?

first check to make sure you attached all your bulbs properly. an unsecure bulb with a worn weather strip will let moisture into your housings. if those are completely sealed up, and you did change your complete housing, you'll have to reseal them using silicone.

if you have HID's right now, i'd remove them. condensation is the #1 killer of bulbs.
