Funny idle at start up.

Funny idle at start up.
just purchased this teg about 3 weeks ago. It is a 97 ls
coupe that was automatic. The guy that i bought it from
is a long time friend that owns a dealership. He did me a
favor by converting it from auto to manual. It has a 2001
GSR tranny with the GSR shifter linkage and shifter
inside. My question is this. I live in N.Y.C, and its cold
right now. So when i start the car after it being off for a
while it does this. After being on for like 2 min. it idles
up then down, up then down, up then down. It does this
for like 2 min. then as the car warms up, it stops and
idles fine. what is causing this. TIA...
