Some people take the soft top off to save weight if there mainly gonna be running the hardtop year round. Most people just put the soft top down and put the hardtop over that. And yes "two people are need to put the top on unless you have a pulley system in your garage."
Don't know never done it before but I would say it's not rocket science, probably just unbolting the steel structure assembly and unhooking the defrost if applicable. Get a haynes if your hesitant.
